    1. Preheat the oven to 200°C. Cut the eggplants in half and pierce the flesh with a knife.

    1. Grease a baking tray with oil and place the eggplant halves on it.

    1. Drizzle the eggplants with 1 tablespoon of olive oil and sprinkle with 1/4 teaspoon of salt.

    1. Place in an oven and bake for 35 minutes.

    1. In a bowl, mix the chopped tomatoes, parsley, 3 tablespoons of olive oil, salt, black pepper and red pepper.

    1. Remove the eggplants from the oven and cover with the pizza cheese, a mixture of tomatoes and Neta cheese.

    1. Reduce the oven temperature to 180°C and bake for an additional 15 minutes.
