Add the leek and butternut squash to the pan. Saute for 5 to 7 minutes, stirring periodically, up until soft.

Pour in the cream and stir. Add the pasta water that was set aside to the pan along with the vegetable stock. Season with salt and pepper.

Let the sauce simmer on low heat for 5-7 minutes until thickened. Stir in the Parmesan and chopped parsley. Remove from heat.

In another pan, heat 1 tablespoon of olive oil over a medium-high flame. Cook till golden after adding the minced garlic.

Season the shrimp with salt and cayenne pepper after they have been added to the pan. Cook for 4 minutes, until thoroughly cooked and pink.
