  1. Boil water and ½ teaspoons of salt to the boil.

  1. Add the chicken livers and cook for 5 to 6 minutes after the water began to boil, or until the center is no longer yellow.

  1. Remove the liver from the pot and allow it to cool completely.

  1. Heat a frying pan over medium heat with a couple tablespoons of vegetable oil.

  1. After adding the grated carrot to the skillet, cook it for an additional five minutes. Season with salt and pepper to taste.

  1. Once the chicken liver is cooled, chop it into bite-sized pieces.

  1. In a large mixing bowl, combine the chopped chicken liver, fried onion and carrot mixture, and diced pickled cucumbers.
