Instructions

  1. Flame only a small amount of vegetable oil in a frying pan on a moderate flame. Add the chopped onion and fry for about 3 minutes until it becomes translucent.

  1. Add the sliced mushrooms and cook for a few more minutes until they begin to soften. Add the butter, coriander leaves salt, and peppers. Mix well.

  1. Add the broccoli florets and minced garlic. Stir to combine. After adding the soy sauce, simmer for a further five minutes, stirring now and then, until the broccoli is soft.

  1. Preheat your oven to 200 degrees Celsius. Grease a baking tray with vegetable oil.

  1. In a bowl, toss the diced potatoes with salt, paprika, Italian herbs, breadcrumbs, cheese, and a drizzle of vegetable oil until well combined.
