Ingredients
  • Chicken breast
  • Garlic (1 clove for boiling, 1 clove for marinade)
  • 1 Ginger slice
  • 1/2 tsp Salt to taste
  • Lettuce divided
  • 1 tbsp Olive oil
  • 1/2 tsp Honey
  • 1/2 tsp Onion powder
  • Black pepper to taste
  • 1/4 cup Plain Greek yogurt
  • 1/4 tsp Dijon mustard
  • 2 Boiled eggs
  • 1/2 cup Cubed avocado
  • Green onions (for garnish)
  • Flax seeds (for garnish)
  • Crushed red pepper sauce (to taste)
Instructions
  1. Over medium heat, boil chicken breasts with a clove of garlic, a slice of ginger, salt, and enough water to cover the chicken

  2. After the chicken is cooked, set it aside until it cools

  3. In a large bowl, mix 3 cups of lettuce, diced chicken, and 1 cup of additional lettuce. Cover the bowl and leave it in the refrigerator for 30 minutes

  4. In a small bowl, mix olive oil, crushed garlic clove, salt (to taste), honey, onion powder, and black pepper

  5. Add plain Greek yogurt and Dijon mustard to the mixture and mix well

  6. Chop the hard-boiled eggs and add to the cooled salad base. Add 3 cups of lettuce, diced chicken, diced avocado, and green onions

  7. Garnish with additional green onions or flax seeds if desired
