  • 3 Ripe bananas, chopped
  • 200 grams Currants (frozen or fresh)
  • 300 grams Mashed strawberries
  • 50 grams Sugar (optional)
  • 1 teaspoon Pectin
Instructions
  1. Take the chopped bananas and freeze them for about 1 hour until they are firm.

  2. Once the bananas are frozen, mash them using an electric blender until they reach a smooth consistency.

  3. Add the currants to the mashed bananas and blend them together with the electric blender until well combined.

  4. Mix the banana-currant mixture thoroughly to ensure the flavors are evenly distributed.

  5. Take your ice cream molds, around 8 pieces should do the trick, and insert a popsicle stick into each mold.

  6. Pour the banana-currant mixture into the molds, filling them up completely.

  7. Place the molds in the refrigerator and let them set for approximately 3 hours until the ice cream is firm.

  8. In a separate pot, add the mashed strawberries along with the sugar (if desired) and 1 teaspoon of pectin. Stir the mixture well to combine.

  9. Bring the strawberry mixture to a boil and let it cook for about 2 minutes, stirring constantly.

  10. Remove the pot from heat and pour the cooked strawberry mixture into a cup or bowl.

  11. Take the set banana-currant ice cream molds out of the refrigerator and carefully remove each ice cream bar from its mold.

  12. Dip each ice cream bar into the strawberry swirl mixture, coating it generously.

  13. Place the coated ice cream bars back in the freezer for a short while to allow the strawberry swirl to set.
