Butternut Squash Pasta With Shrimp is a delightful way to elevate a weeknight dinner or impress guests with minimal effort its balance of flavors, textures, and nutritional benefits makes it a standout dish.

Ingredients
    For the Pasta & Sauce
  • 400 grams Pasta cooked al dente
  • 300 grams Butternut squash peeled and diced
  • 1 Leek sliced thinly
  • 2 tablespoons Olive oil
  • 1/2 Clove garlic smashed but kept whole
  • 150 ml Heavy cream
  • 100 ml Vegetable stock
  • 100 ml Reserved pasta cooking water
  • Salt and Pepper to taste
  • 50 grams Parmesan cheese grated
  • Fresh parsley chopped for garnish
  • For the Prawns
  • 200 grams Prawns cleaned deveined
  • 1 Clove garlic
  • 1 tablespoons Olive oil
  • 1/4 teaspoon Cayenne pepper
  • Salt to taste
Instructions
  1. In a large pan, fire 2 tablespoons olive oil under a moderate flame.After adding the crushed garlic clove, simmer for approximately one minute, or until aromatic.

  2. Add the leek and butternut squash to the pan. Saute for 5 to 7 minutes, stirring periodically, up until soft.

  3. Pour in the cream and stir. Add the pasta water that was set aside to the pan along with the vegetable stock. Season with salt and pepper.

  4. Let the sauce simmer on low heat for 5-7 minutes until thickened. Stir in the Parmesan and chopped parsley. Remove from heat.

  5. In another pan, heat 1 tablespoon of olive oil over a medium-high flame. Cook till golden after adding the minced garlic.

  6. Season the shrimp with salt and cayenne pepper after they have been added to the pan. Cook for 4 minutes, until thoroughly cooked and pink.

  7. To make sure the pumpkin sauce coats the cooked pasta evenly, toss it.

  8. If preferred, garnish with more parmesan and fresh parsley. Serve after warming up.
