Ingredients
  • 240 grams Boneless, skinless chicken breast, cut into small cubes
  • 1 tablespoon Chili powder
  • 1/2 tablespoon Paprika
  • 1/2 tablespoon Cumin
  • 1 tablespoon Salt
  • 1/2 tablespoon Pepper
  • 1 tablespoon Garlic powder
  • 1 tablespoon Onion powder
  • 1 tablespoon Cayenne pepper
  • 1 tablespoon Oil
  • 1/2 Medium-sized onion, chopped
  • 1 cup Red and green peppers, sliced
  • 1 tablespoon Lemon juice
  • 10 -Inch tortillas
  • Sharp cheddar cheese, diced
  • Monterey Jack cheese, diced
  • Sliced avocado, lime, and tomato for garnish
Instructions
  1. In a bowl, combine the chili powder, paprika, cumin, salt, pepper, garlic powder, onion powder, and cayenne pepper to make the fajita seasoning. Mix it all together

  2. Add the seasoning to the cubed chicken and mix until the chicken is completely coated

  3. In a pan, heat up one tablespoon of oil over medium heat. Add the coated chicken and cook for about 5 minutes, until it turns brown

  4. On one side of the pan, add the chopped onion and sliced red and green peppers. Cook until the veggies are tender, about 5 more minutes

  5. Add the lemon juice to the pan and mix everything together. Put the combination of vegetables and chicken aside

  6. Remove the tortilla from the pan and place the cooked chicken and vegetable mixture on top. Sprinkle with diced sharp cheddar cheese and Monterey Jack cheese

  7. Fold the tortilla in half, pressing it down gently to seal the filling inside

  8. In a clean pan, heat 2 tablespoons of oil over medium heat. Place a tortilla in the pan and move it around so that the oil covers the bottom evenly. Cook for approximately two minutes, or until golden brown on the bottom

  9. Flip the tortilla and cook for another 2 minutes on the other side

  10. Serve the cheesy chicken quesadilla warm with your favorite toppings of avocado slices, lemon and tomato
