Ingredients
  • 2 Chicken fillets
  • 1 Bay leaf
  • Assorted spices (such as paprika, oregano, or your preferred seasoning)
  • Whole peppercorns
  • Salt
  • 2 Cloves of garlic, minced
  • Fresh parsley, chopped

  • 200 grams Mushrooms, cubed
  • 1 tablespoon Olive oil
  • 1 tablespoon Butter
  • Salt and pepper, to taste
  • 10 Cherry tomatoes, halved
  • 100 grams Cheese, cubed
  • Mayonnaise (homemade or store-bought)
  • Optional Mustard, Sugar
Instructions
  1. In a pot, combine the bay leaf, spices, whole peppercorns, salt, minced garlic, and chopped parsley. Add enough water to cover the chicken fillets.

  2. Place the chicken fillets in the pot and bring the mixture to a boil. After lowering the heat to low, simmer it for five minutes.

  3. Turn off the heat, cover the pot, and allow the chicken to marinate in the liquid for 30 minutes. This will help keep the chicken tender and flavorful.

  4. Remove the cooked chicken fillets from the pot and let them cool. Once cooled, cut the chicken into cubes and set aside.

  5. Melt the butter and olive oil in a frying pan over medium heat. Add the cubed mushrooms and sauté until they turn golden brown.

  6. To taste, add salt and pepper to the mushrooms. After moving them to a platter, let them to cool.

  7. In a bowl, combine the cherry tomato halves and cubed cheese.

  8. Add the cubed chicken fillets and sautéed mushrooms to the bowl.

  9. In a separate bowl, prepare the mayonnaise. You can either use store-bought mayonnaise or make your own by whisking together a whole egg, salt, sugar, and mustard (optional). Gradually add vegetable oil (such as olive oil or sunflower oil) while whisking until the dressing thickens. Adjust the amount of oil as needed.

  10. Pour the mayonnaise dressing over the salad and season with additional salt and pepper to taste.

  11. Once all the ingredients are fully incorporated, stir them all together gently.

  12. To enable the flavors to combine, place the chicken salad in the refrigerator for a minimum of half an hour.

  13. Serve and enjoy your delicious chicken salad.

  14. There you have it, a delightful chicken salad recipe with a homemade mayo dressing. I hope you enjoy preparing and savoring this flavorful dish.
