Ingredients
  • 1 cup Cashews
  • 300 ml Almond milk
  • 1 tablespoon Peanut butter
  • 3 to 5 Dates
  • 100 grams Melted chocolate
Instructions
  1. Start by gathering all of your ingredients and making sure they are ready to use.

  2. In a blender or food processor, combine cashews, almond milk, peanut butter, and dates. Mix until you get a smooth mixture. Ensure that every component is well mixed.

  3. Next, prepare a plastic bag and cut a small hole in one of its corners to make pouring easier. This will make it easier to fill out your template later.

  4. Take the mold you want for ice cream bars and insert the wooden sticks into the mold holes. This will be the handle for your rods.

  5. Carefully pour the cashew mixture into the mold, filling each cavity. Use a plastic bag to make it easier and less messy. Make sure to distribute the mixture evenly between the molds.

  6. After filling all the molds, place the entire mold in the refrigerator. Let freeze for about 12 hours or until completely set.

  7. Once the ice cream bars are completely frozen, it's time to dip them in chocolate. Melt the chocolate using a double boiler or in short bursts in the microwave, stirring in between to avoid burning.

  8. Remove the mold from the freezer and carefully scoop each piece of ice cream out of its cavity. Dip each piece in the melted chocolate, making sure half of the ice cream is covered with the chocolate. You can use a spoon to help you with this step.

  9. Place the dipped bars on a tray or baking tray lined with parchment. Allow the chocolate to set by placing it back in the refrigerator for a few minutes.

  10. Once the chocolate is set, your cashew ice cream bars are ready to enjoy! Serve it cold and enjoy its creamy and nutty taste.
