Ingredients
  • 120 grams Butter
  • 1 Egg
  • 50 ml Vegetable oil
  • 80 grams Powdered sugar
  • 4 grams Vanillin
  • 3 grams Vanillin
  • 350 grams Flour
  • 120 grams White chocolate
  • 40 ml Olive oil
  • 20 grams Honey, to taste)
  • 50 grams Grated coconut (for garnish)
Instructions
  1. In a large bowl, put 120 grams of melted butter. Make sure it is at room temperature to make mixing easier.

  2. Add the egg and 50 ml of vegetable oil to the bowl. Stir everything well until it's all spread evenly.

  3. Next, add 80 grams of powdered sugar, 4 grams of vanillin, and 3 grams of baking powder to the bowl. Mix everything together until the sugar and baking powder are evenly distributed.

  4. Gradually add 350 grams of flour to the mixture, stirring until a soft dough is formed. If the dough seems too sticky, you can add a little more flour until it reaches the right consistency.

  5. Once the dough is ready, cover it with plastic wrap and refrigerate for about 20 minutes. This will help hold the dough together and make it easier to handle.

  6. Preheat the oven to 180°C (350°F).

  7. Take the cooled dough and cut a piece.Roll it out on a surface dusted with flour.

  8. Cut individual circles from the dough.Transfer them to a parchment paper-lined baking pan.

  9. Bake the dough circles in the preheated oven for about 40 minutes, or until they turn golden brown.

  10. Let's make the topping while the cookies bake. In a small bowl, mix 120 grams of white chocolate and 40 ml of olive oil. Microwave or use a double boiler to melt the chocolate until smooth.

  11. After the cookies are cooked, we take them out of the oven and leave them to cool completely.

  12. Take half the amount of biscuits and dip them in the melted white chocolate mixture. Allow any excess chocolate to drip off before placing it on a cooling rack.

  13. For the other half of the biscuits, spread a layer of honey on each one. Then sprinkle shredded coconut on top to add texture and delicious flavour.
