Ingredients
  • 2 cup Fresh spinach
  • 2 tablespoons Butter
  • 2 Cloves garlic minced
  • 1 tablespoons All-purpose flour
  • 2 tablespoons Heavy cream
  • 1/2 cup Water
  • 1 cup Milk
  • 1/4 teaspoon Salt
  • 1/8 teaspoon Black pepper
  • Optional Sour cream for garnish
Instructions
  1. In a pot, bring water to a boil. Add the spinach and blanch it for just a minute. To stop the cooking process, extract the spinach from the water and immediately submerge it in a bowl of cold water.

  2. After draining, mix the spinach until it's smooth. On a pan, melt the butter over a medium-high flame. Sauté the cut garlic until it becomes aromatic.

  3. To make a roux, add the flour to the garlic and butter mixture and stir constantly.

  4. Add the ground spinach a little at a time, stirring thoroughly to combine. Pour in the milk and water, stirring regularly to avoid lumps.

  5. Season with salt and black pepper to taste. Bring the mixture to a moderate boil.

  6. Stir in the cream and continue cooking until the creamed spinach achieves the desired consistency.

  7. Once done, transfer the creamed spinach to a serving dish and garnish with a dollop of sour cream for an extra creamy finish.
