Ingredients
  • 0.5 liter Canned beets in apple juice
  • 1 Onion
  • 3 Garlic cloves
  • 1/2 Hot pepper
  • 1 Medium carrot
  • 1 liter Broth
  • 2 tablespoons Tomato paste
  • Black pepper
  • Salt
  • Lemon juice to taste
  • Sour cream and bacon for serving
Instructions
  1. Heat a small amount of oil in a big pot over a low flame.

  2. Cook the chopped onion for three to four minutes, or until it becomes tender.

  3. Add the minced garlic, hot pepper, and grated carrot. Sauté for another 3–5 minutes until fragrant.

  4. Add the canned beets with their apple juice, and stir in the tomato paste. Cook for 2–3 minutes to combine the flavors.

  5. Pour in the broth, stir well, and bring to a gentle boil.

  6. After lowering the heat, simmer the soup for 20 to 25 minutes, or until the vegetables are soft.

  7. To taste, add the juice of one lemon, salt, or black pepper.

  8. Ladle the soup into bowls and garnish with a dollop of sour cream and bacon bits if desired. Enjoy your warm, flavorful beet soup.
