Ingredients
  • 2 tablespoons Oil
  • 1 Large onion chopped
  • 2 Garlic cloves minced
  • 2 Carrots chopped
  • 1 Apple peeled and chopped
  • 1 Potato peeled and chopped
  • 2 Medium beets peeled and chopped
  • 1 liter Vegetable stock
  • 2 tablespoons Salt (adjust to taste)
  • 1/2 teaspoon Black pepper
  • 1/2 teaspoon Coriander
  • 2 teaspoon Ground cumin
  • 3 Eggs
  • 100 grams Greek yogurt (plus extra for garnish)
  • Black sesame seeds (for garnish)
  • Freshly chopped parsley (for garnish)
Instructions
  1. Fire the oil in a big pot over a low flame. Add the onion, garlic, carrots, apple, potato, and beets.Cook, stirring, while the vegetables are tender.

  2. Pour in the vegetable stock and season with salt, black pepper, coriander, and cumin. Let the mixture simmer until all the vegetables are fully cooked.

  3. In a separate pot, cook the eggs to your desired doneness and set aside.

  4. Once the vegetables are cooked, use a blender to puree the mixture until smooth and creamy. Add the Greek yoghurt for extra creaminess and light flavor.
