Ingredients
  • 1 Egg
  • 90 g Sugar
  • 1 tsp Salt
  • 120 g Chocolate
  • 30 g Butter
  • 90 g Flour
  • 1/2 tsp Baking powder
  • 1/4 tsp Vanilla extract
  • 125 g Cherries
  • 25 g Caster sugar
  • 4 g Agar agar
  • 60 g Butter
  • 60 g Powdered sugar
  • 180 g Cream cheese
Instructions
  1. In a bowl, crack the egg and whisk it together with 90 grams of sugar and 1 teaspoon of salt until the sugar dissolves

  2. In a saucepan, boil 120 grams of chocolate and 30 grams of butter with a little water over low heat. Stir until melted, then revemoStir slowly until melted and well mixed

  3. Pour the melted chocolate mixture into the bowl with the egg mixture. Mix everything together until well combined

  4. Sift 90 grams of flour, 1/2 teaspoon of baking powder, and 1/4 teaspoon of vanilla extract into the chocolate mixture. Mix everything well with a spoon

  5. Cover the dough with aluminum foil and refrigerate for 30 minutes to make it easier to work with

  6. Meanwhile, heat 125 grams of cherries in a saucepan over medium heat. Stir until melted, then revemoWait for the cherries to release their juice. Stir slowly and add 25 grams of caster sugar. Continue stirring until it boils and the sugar dissolves completely

  7. Reduce the heat and add 4 grams of agar agar. Stir until melted, then revemoStir until melted, then remove from the heat. Strain the cherry mixture through a sieve to remove the skins

  13. Cover the cherry jam with the second half of the biscuits and press gently to ensure that the cream settles well and the biscuits stick together
