Description

Ingredients
  • 2 Egg whites
  • A pinch of salt
  • 60 grams Sugar
  • 5 grams Vanilla sugar
  • 2 Egg yolks
  • 2 tablespoons Sugar
  • 70 grams Flour
  • Boiled condensed milk (for filling)
Instructions
  1. Set your oven to 200°C (392°F) and line a baking tray with parchment paper.

  2. In a bowl, add 2 egg whites and a pinch of salt. Spin the egg whites with a stand mixer until light peaks form.

  3. Gradually add 60 grams of sugar and 5 grams of vanilla sugar while continuing to mix until the meringue is stiff and glossy.

  4. In a separate small bowl, combine 2 egg yolks with 2 tablespoons of sugar.

  5. Beat the yolks and sugar with an electric mixer until the mixture is pale and creamy.

  6. Gently fold the yolk mixture into the meringue by hand using a spatula. Add 70 grams of flour and mix well until fully incorporated.

  7. Transfer the mixture into a piping bag (or use a plastic bag with a corner cut off).

  8. Pipe small rounds or dollops onto the parchment-lined baking tray.

  9. Place the tray in the preheated oven and bake for 10 minutes, or until the cookies are golden brown and firm.

  10. Once baked and cooled, take one cookie, spread a small amount of boiled condensed milk in the center, and top it with another cookie to create a sandwich.

  11. Enjoy your homemade condensed milk meringue sandwiches.

Note

To make boiled condensed milk, heat a can of condensed milk (with the label removed) in a pot of boiling water for 2-3 hours.

Allow the cookies to cool completely before assembling the sandwiches; otherwise, the condensed milk will melt.

Overmixing the batter will result in tough cookies.
