    Description

    Easy Eggplant Roll ups are a versatile and healthy dish that blends the rich flavors of eggplant with a variety of ingredients, creating an indulgent yet balanced meal perfectly cooked, delicious and sure to impress.

    Ingredients
    • 2 Eggplants sliced
    • 1 tablespoons Salt
    • Water
    • Olive oil
    • 1/2 teaspoon Red pepper
    • 1/2 teaspoon Salt
    • 100 grams Cream cheese
    • 4 Walnuts chopped
    • 2 Garlic cloves minced
    • 5 grams Parsley chopped
    Instructions
    1. Place the sliced eggplants in a bowl, add 1 tablespoon of salt, and cover with water. Let them soak for 15 minutes.

    2. Rinse the eggplants with water and pat them dry.

    3. Preheat the oven to 185 degrees Celsius (or you can fry them in a pan).

    4. Grease a baking tray with olive oil and place the eggplant slices on it.

    5. Drizzle olive oil over the eggplants, sprinkle with red pepper and salt.

    6. Bake in the oven for 25 minutes until the eggplants are cooked through.

    7. In a bowl, mix the cream cheese, chopped walnuts, minced garlic, and chopped parsley.

    8. Once the eggplants are cooked, place a spoonful of the cream cheese mixture on each eggplant slice and roll them up.
