Ingredients
  • 2 Medium-sized eggplants
  • Water
  • 2 tsp Salt
  • Lettuce
  • Olive oil
  • 1 Sweet red pepper
  • 5 Green onions
  • 1 tbsp Dried mint
  • 1 cup Pitted olives
  • 3 tsp Olive oil
  • 1 tbsp Salt
  • Lemon pepper (to taste)
  • 1 tsp Maple syrup or Honey
Instructions
  1. Start by peeling and cutting the eggplants into small pieces. Place them in a large bowl and add water along with 2 teaspoons of salt. Let them sit for about 10 minutes, then filter out the water

  2. While the eggplants are resting, prepare the lettuce by cutting, washing, and drying it thoroughly

  3. In a pot, heat some olive oil over medium heat. Add the drained eggplant pieces and sauté them until they turn golden brown. This will take a few minutes

  4. Next, cut the sweet red pepper into small pieces and chop the green onions. Add them to the pot with the eggplant and cook them together for about 2 minutes

  5. Now, sprinkle in the dried mint and add the pitted olives. Give it all a good stir and cook for an additional minute. Once done, remove the mixture from the heat and let it cool slightly

  6. Once the eggplant mixture has cooled down a bit, add it to the prepared lettuce

  7. In a separate cup, combine 3 teaspoons of olive oil, 1 tablespoon of salt, lemon pepper to your taste, and 1 tablespoon of maple syrup or honey. Mix it all together to create the dressing

  8. Pour the dressing over the salad and mix it well, And there you have it, a delicious eggplant salad

  9. Serve it up and enjoy the flavors. Feel free to alter the seasoning to your liking
