Ingredients
    For the Eggplant Layer
  • 2 Large eggplants thinly sliced
  • Salt (for sprinkling on eggplant slices)
  • 1 Onion chopped
  • 1 Colored bell pepper (yellow, red, or green) chopped
  • 2 Cloves of garlic
  • Fresh basil (a handful)
  • 500 grams Minced meat
  • Salt and pepper (to taste)
  • 1 teaspoon Paprika
  • Olive oil (for baking)
  • For the Creamy Cheese Sauce
  • 100 Clove of garlic minced Cream cheese
  • 1 Clove of garlic minced
  • 1 cup Cream milk
  • Salt and pepper (to taste)
  • Grated cheese
Instructions
  1. Cut the eggplants into thin slices and sprinkle them with salt. To let evaporate out, let things sit for ten to fifteen minutes. Then use a paper cloth to pat things dry.

  2. In a blender or food processor, add the chopped onion, colored pepper, garlic cloves, and fresh basil. Blend until smooth.

  3. In a large bowl, mix the blended vegetable mixture with the minced meat. Season with salt, pepper, and paprika. Mix well.

  4. Take each eggplant slice and place a portion of the minced meat mixture onto the slice. Roll the eggplant around the filling to form a neat roll.

  5. Preheat the oven to 200°C (390°F). Grease a baking tray with olive oil and arrange the eggplant rolls on the tray.

  6. Over each roll, pour on some olive oil. Bake in the preheated oven for about 40 minutes until the eggplants are soft and the filling is cooked through.

  7. While the eggplant is baking, prepare the sauce. In a bowl, mix cream cheese, minced garlic, cream milk, salt, and pepper. Stir until smooth.

  8. After the 40 minutes of baking, take out the eggplant rolls and pour the creamy cheese sauce over them.

  9. Sprinkle grated cheese on top. Return the tray to the oven and bake for another 7 minutes at 200°C until the cheese is melted and golden.

  10. Let the dish cool slightly, then serve hot. Enjoy your delicious stuffed eggplant rolls with creamy cheese sauce.
