    1. Cut one medium onion and four ripe tomatoes.

    1. In a glass bowl, add 4 cloves of garlic, whole black peppercorns (to taste), chopped onion, a handful of fresh parsley, and chopped tomatoes.

    1. Pour hot water into the bowl until all ingredients are submerged.

    1. Cover the container and let it sit for at least 30 minutes.

    1. Using a sieve, strain the water into another bowl.

    1. Add salt (to taste), 1 tablespoon of sugar, and 1 tablespoon of sunflower oil to the strained water. Allow it cook on the gas burner for around three minutes.

    1. Pour the strained and seasoned water back over the tomato mixture. Add 1 tablespoon of vinegar. Cover the bowl again and let it marinate for at least 24 hours.

    1. After 24 hours, the pickled tomatoes and onions are ready to enjoy as a flavorful side dish.
