Ingredients
    Lentil Soup
  • 2 tablespoons Olive oil
  • 1 Onion chopped
  • 2 Carrots diced
  • 1 Clove of garlic minced
  • 1 Red pepper diced
  • 1 cup Chopped tomatoes
  • 1 teaspoon Paprika
  • 1 teaspoon Indian thyme
  • 1/2 teaspoon Turmeric
  • 1/4 teaspoon Pepper
  • 1 cup Dried lentils
  • 5 cup Water
  • Salt to taste
  • For the sauce
  • 1/2 cup Fresh coriander
  • 2 Garlic cloves
  • 1/4 cup Walnuts
  • 2 tablespoons Lemon juice
  • 2 tablespoons Olive oil
  • Salt and pepper to taste
Instructions
  1. In a large bowl or pot, heat 2 tablespoons of olive oil. Add the chopped onion and sauté until softened.

  2. Add the chopped carrots, minced garlic, and chopped red pepper. Stir well.

  3. Add the chopped tomatoes, paprika, thyme, turmeric, and ground pepper. mix thoroughly.

  4. Stir in the lentils and pour in 5 cups of water.

  5. After bringing to a boil, turn down the heat. Simmer for 20 minutes with a cover on, stirring now and then.

  6. After 20 minutes, season the soup with salt and a drizzle of olive oil. Mix well and keep warm.

  7. In a blender, combine fresh coriander, garlic cloves, walnuts, lemon juice, olive oil, salt, and pepper. Blend until smooth and creamy.

  8. Pour the lentil soup into bowls. Add a generous spoonful of the coriander-walnut sauce on top of each serving.
