    Ingredients
    • 2 Eggplants, cut into circles
    • Vegetable oil (for greasing the tray)
    • 1/2 teaspoon Salt (for the eggplant)
    • 1/2 teaspoon Black pepper (for the eggplant)
    • 1 Garlic clove minced
    • 10 grams Parsley finely chopped
    • 1/3 teaspoon Red pepper
    • 1/3 teaspoon Black pepper (for the dressing)
    • 1/3 teaspoon Salt (for the dressing)
    • 4 tablespoons Olive oil
    • 1.5 tablespoons Lemon juice
    Instructions
    1. Preheat your oven to 220°C (430°F). Apply vegetable oil to a baking pan to grease it.

    2. Place the eggplant circles on the tray, ensuring they are in a single layer.

    3. Drizzle olive oil over the chopped eggplant slices.

    4. Sprinkle 1/2 tsp salt and 1/2 tsp black pepper over the eggplant.

    5. Place the tray in the oven and roast for 25 minutes until the eggplants are golden and tender.

    6. In a small bowl, combine minced garlic, chopped parsley, 1/3 tsp red pepper, 1/3 tsp black pepper, and 1/3 tsp salt.

    7. Add 4 tbsp olive oil and 1.5 tbsp lemon juice. Stir the mixture well until everything is well combined.

    8. Take the eggplants out of the oven once they have finished roasting.

    9. Drizzle the garlic and herb dressing over the roasted eggplant slices. Serve hot or warm, and enjoy.
