    Ingredients
    • 260 grams Flour
    • 130 grams Sugar
    • 5 grams Leavening agent (baking powder)
    • 1/2 teaspoon Salt
    • 200 grams Cold butter
    • 2 Egg yolks
    • 450 grams Strawberries, washed and chopped
    • 2 tablespoons Starch (cornstarch or potato starch)
    • 1/2 teaspoon Lemon zest
    Instructions
    1. In a large mixing bowl, combine 260 grams of flour, 130 grams of sugar, 5 grams of leavening agent, and 1/2 teaspoon of salt.

    2. Stir the dry ingredients together until well mixed. Add 200 grams of cold butter, cut into small cubes.

    3. Use your hands to gradually crumble the butter into the dry ingredients until the mixture resembles coarse crumbs.

    4. Add 2 egg yolks to the mixture and continue to crumble with your hands until the dough comes together.

    5. Divide the dough into two portions: two-thirds for the base and one-third for the topping.

    6. Press the larger portion of the dough evenly into the bottom of a baking tray.

    7. Place both the baking tray and the remaining dough in the refrigerator for 20 minutes.

    8. While the dough chills, wash and chop 450 grams of strawberries into small pieces.

    9. In a separate bowl, combine the strawberries with 2 tablespoons of starch and 1/2 teaspoon of lemon zest. Stir until all of the strawberries are covered equally.

    10. Preheat your oven to 190°C (375°F).

    11. Remove the dough mold from the refrigerator and spread the strawberry mixture evenly over the dough base.

    12. Crumble the remaining third of the dough over the top of the strawberries, distributing it evenly.

    13. Place the baking tray in the preheated oven and bake the cake for about 40 minutes, or until the top is golden brown.

    14. Before slicing and serving, take the cooked cake out of the oven and allow it to cool.
