    Ingredients
    • 2 Eggplants
    • 4 tablespoons Olive oil
    • 1/4 teaspoon Salt
    • 1 cup Pizza cheese (grated)
    • 1/2 cup Neta cheese (grated)
    • 2 Tomatoes (chopped)
    • 6 grams Parsley (finely chopped)
    • 1/4 teaspoon Black pepper
    • 1/4 teaspoon Red pepper
    Instructions
    1. Preheat the oven to 200°C. Cut the eggplants in half and pierce the flesh with a knife.

    2. Grease a baking tray with oil and place the eggplant halves on it.

    3. Drizzle the eggplants with 1 tablespoon of olive oil and sprinkle with 1/4 teaspoon of salt.

    4. Place in an oven and bake for 35 minutes.

    5. In a bowl, mix the chopped tomatoes, parsley, 3 tablespoons of olive oil, salt, black pepper and red pepper.

    6. Remove the eggplants from the oven and cover with the pizza cheese, a mixture of tomatoes and Neta cheese.

    7. Reduce the oven temperature to 180°C and bake for an additional 15 minutes.
