Ingredients
  • 2 Zucchini, peeled and cut in half
  • Salt, for sprinkling
  • Vegetable fat for frying
  • 150 grams Mushrooms, sliced
  • 140 grams Onions, finely chopped
  • 140 grams Carrots, grated
  • 1 Pepper, finely chopped
  • Salt, to taste
  • 100 grams Cheese, grated
Instructions
  1. Preheat your oven to 180°C (350°F).

  2. Take your peeled zucchini halves and make cuts lengthwise, creating a sort of pocket. Remove the core of the zucchini if desired. Sprinkle the zucchini halves with a pinch of salt and set them aside.

  3. Heat some vegetable fat in a frying pan over medium heat. Add the sliced mushrooms, chopped onions, grated carrots, and finely chopped pepper to the pan. Season with salt to taste. Stir and cook until the vegetables become tender and slightly golden.

  4. While the filling is cooking, drain any excess liquid from the zucchini halves. You can use a paper towel to pat them dry if necessary.

  5. Next, place the zucchini halves on a baking tray. Take your cooked vegetable filling and stuff it generously into the zucchini pockets.

  6. Sprinkle the grated cheese on top of the stuffed zucchini, ensuring it covers the filling evenly.
