Ingredients
  • 2 Chicken fillets
  • 3 tablespoons Olive oil
  • 1 Lemon Juice
  • 2 Cloves of garlic, pressed
  • 1 teaspoon Italian herb mixture
  • Salt and pepper, to taste
  • 4 cup Fresh rocket leaves
  • 1 Cucumber, sliced
  • 2 cup Cubed watermelon
  • 1/2 cup Diced feta cheese
  • 1/4 cup Pitted olives
  • 1 tablespoons Olive oil
  • 1 tablespoons Balsamic sauce
Instructions
  1. For the marinade, whisk together the olive oil, lemon juice, pressed garlic, Italian herb mixture, salt, and pepper in a bowl.

  2. Pour the marinade over the chicken fillets in a shallow dish.. Let them marinate for 1-2 hours, ensuring they are well coated.

  3. After marinating, remove the chicken from the marinade and pat dry with kitchen paper to remove excess marinade.

  4. Heat a frying pan over medium heat and cook the chicken fillets on both sides until they are golden and cooked through. This should take about 4-5 minutes per side.

  5. Set the oven's temperature to 200 degrees Celsius, or 340 degrees Fahrenheit. Transfer the partially cooked chicken fillets to a baking dish and grill them in the oven for 20 minutes until they are fully cooked and juicy.

  6. While the chicken is grilling, wash and dry the rocket leaves, then arrange them on a serving dish.

  7. Slice the cucumber and add it to the rocket leaves.

  8. Cut the watermelon into cubes, removing the seeds and rind, and add it to the salad.

  9. Once the chicken is cooked, cut it into large pieces and place them on top of the salad.

  10. Sprinkle the diced feta cheese and olives over the salad.

  11. Finally, drizzle the salad with some olive oil and balsamic sauce to enhance the flavors.
