    1. In a large saucepan, add the 2 teaspoons of olive oil and sauté the onions over medium heat until translucent.

    1. Add the crushed garlic cloves to the pan and fry with the onions until lightly browned.

       

    1. Pour 1.5 liters of water into the saucepan and add the zucchini cubes.Give it a few minutes to cook.

    1. Then add the potato cubes to the pan. Continue cooking until the vegetables are tender. Season either salt and black pepper as needed.

    1. Once the vegetables are cooked, use an immersion blender to blend the soup until smooth and creamy.

    1. In a small bowl, combine the chopped parsley, a little lemon zest and crushed garlic to prepare the filling.
