  1. Preheat the oven to 200°C (392°F).

  1. Cut the eggplants in half lengthwise to create pockets. Bake the eggplants in the preheated oven for 30 minutes.

  1. While the eggplants are baking, heat the oil in a frying pan over medium heat. Add the rosemary and heat it until fragrant.

  1. Add the chicken cubes to the pan and stir. Then, add the onion, 1 teaspoon of salt, and 1/2 teaspoon of chili flakes. Stir to combine.

  1. Add 1 tablespoon of barbecue sauce and 2 tablespoons of sesame seeds to the pan. Stir well to combine all ingredients.

  1. Once the eggplants are done baking, gently fluff the pulp with a fork.

  1. Add 30 grams of Parmesan cheese to the hot eggplant pulp. Mix in the minced garlic and diced tomato, then season with a pinch of salt.
