-
In a bowl, add 2 egg whites and a pinch of salt. Spin the egg whites with a stand mixer until light peaks form.
-
Gradually add 60 grams of sugar and 5 grams of vanilla sugar while continuing to mix until the meringue is stiff and glossy.
-
In a separate small bowl, combine 2 egg yolks with 2 tablespoons of sugar.
-
Beat the yolks and sugar with an electric mixer until the mixture is pale and creamy.
-
Gently fold the yolk mixture into the meringue by hand using a spatula. Add 70 grams of flour and mix well until fully incorporated.
-
Transfer the mixture into a piping bag (or use a plastic bag with a corner cut off).
-
Pipe small rounds or dollops onto the parchment-lined baking tray.
-
Place the tray in the preheated oven and bake for 10 minutes, or until the cookies are golden brown and firm.
-
Once baked and cooled, take one cookie, spread a small amount of boiled condensed milk in the center, and top it with another cookie to create a sandwich.

Note
To make boiled condensed milk, heat a can of condensed milk (with the label removed) in a pot of boiling water for 2-3 hours.
Allow the cookies to cool completely before assembling the sandwiches; otherwise, the condensed milk will melt.
Overmixing the batter will result in tough cookies.
