  1. In a bowl, combine boneless chicken with olive oil, red chili powder, garam masala, cumin powder, green papaya paste (or yogurt), garlic paste, ginger paste, sugar and salt to taste. Mix everything well

  2. Cover the bowl and leave the chicken in the refrigerator for about 30 minutes. This will allow the flavors to penetrate the chicken and make it more flavorful

  3. In a separate bowl, mix the assorted peppers with the sliced onions and cherry tomatoes, if desired. To taste, add salt and black pepper for seasoning

  4. Heat some oil in a frying pan over medium to high heat. When the oil is hot, add the marinated chicken and cook until fully cooked and beautifully browned. This will take approximately 8 to 10 minutes, depending on the thickness of the chicken pieces

  5. After the chicken is cooked, remove it from the pan and leave it aside. In the same pan, add the hot mixed vegetables and sauté for 5-7 minutes, until tender and slightly charred
