  1. Heat a little amount of olive oil in a big saucepan over medium heat

  2. Add chopped onions and minced garlic. Sauté until onions are translucent

  3. Add diced carrots, sweet potatoes, zucchini, and broccoli to the pot. Cook while stirring for a little while

  4. Add enough veggie broth or water to cover the vegetables. Once the mixture reaches the point of boiling, reduce the heat until it simmers. Cook until the vegetables are tender

  5. While the soup is simmering, in a separate pan, heat olive oil over medium heat. Add bread cubes and toast them until golden brown. Set aside

  6. Season the soup with salt, diced red bell pepper, and dried garlic according to your taste

  7. Once the vegetables are tender, use an immersion blender to blend the soup until smooth. If you don't have an immersion blender, transfer the soup in batches to a blender, blend, and return to the pot
